Day 3: Ohmmmmmm

I haven’t done yoga in MONTHS! I decided that I was going to do it this morning. I realize in my old age (ok. I’m not old) that to get into shape, I need to be more flexible. While I may want to be like gymnast flexible, I have to be honest with myself. I’ll just be happy to not have creaky bones until I’m at least a hot 80 year old chickie. 
My return to yoga was rough this morning. Positions that I would have no problem doing in the past felt like I had never done them before. Would you believe it? I was WINDED. Weird, when you’re just doing exercises on the floor. Oops. I said exercise. I should say MOVES.
Last night, I went to the 92nd St. Y (here in NYC) to see the wonderfully inspiring Victoria Moran (Main Street Vegan) speak about weight loss and being plant powered. Her tips and storytelling really connected with me, as I jotted notes with takeaways of her talk. I wish I had time to run up and say HI, having met her in August at the Vegan Mainstream Professionals Bootcamp, but there’s always next time, right?
As you know, I’ve not been healthiest vegan in the world, but I feel like there’s this huge change coming into my life. It’s going to make myself a better person from the inside and out.

Green Breakfast Smoothie

Serves 2-4

  • 4-5 ice cubes
  • 1/2 c. old fashioned oats
  • 1/2 T. of chia seeds
  • A handful of fresh kale, de-stemmed
  • 1/2 c. frozen strawberries
  • 1/2 c. frozen peach slices
  • Juice of 1 lemon
  • 1 c. water
  • Drizzle of agave nectar, optional for sweetness

  1. Place ingredients, except water, into a high-speed blender. Set on high
  2. Remove the small cap of your blender and use a tamper to help loosen up the mixture
  3. Slowly pour in the water
  4. Blend into smooth
  5. Share and pour
  6. Drizzle agave nectar on top, for a little added sweetness
Note: If you have popsicle holders, you can use the extra for a nice morning frozen treat!
