Mac and I were trolling the aisles at Whole Foods, planning our meals for the upcoming week. One of the things we wanted to make was some kind of icy treat. As we added things to our shopping cart, ideas started to brew. When we hit the frozen foods aisle, we came upon a bevy of frozen fruit options. I decided to go with pineapple and try to figure out what to whip up.
When we got home, I decided to make some kind of mix between an Italian ice and fruit sorbet. I tossed the pineapple with some water and a little bit of Truvia in the food processor, and let it roll. It was delicious!
Pineapple Crush Slush

- 1 c. frozen cut pineapple, from fresh, not canned
- 1 pkt sugar-substitute (ex. Splenda or Truvia)
- 1/8 c. water
- Place all ingredients in a food processor and pulse a few times to break up the pineapple chunks. Blend until mixture is smooth, yet slushy
