Day 7: Chef Salad Pita Pockets

We’re at the final day of our 7-Day Salad Challenge. I started think if we should go out with a BANG on this. However, it came to mind that eating healthy, balancing proteins and veggies and getting creative in the kitchen doesn’t need to be celebrated like a party. It should be promoted as something to incorporate into your everyday life. This is the lesson we have learned

So rather than try to get all sophisticated, we decided to just make a simple chef’s salad. The only twist was to serve it in a pita with homemade dressing. Keeping it easy and light on a Sunday night was the way to go this time.

With that, we conclude this 7-day challenge and start on a lifelong one.

Chef Salad Pita Pockets

Serves: 4


  • 1 head romaine lettuce, chopped
  • 2 tomatoes, chopped
  • 1/2 large cucumber, peeled and chopped
  • 3 vegan cheddar cheese slices
  • 9 slices of your favorite veggie meat 
  • 4 Pitas, halved
  • Russian dressing (see recipe below)


  1. In a large bowl toss lettuce, tomatoes and cucumber
  2. Stack the cheese and veggie meat. Cut into ribbons. Toss into salad mixture
  3. Open a pita half and spread a thin layer of Russian dressing
  4. Stuff pita half with some of the salad mixture
  5. Spoon dressing over salad
  6. Repeat with remaining halves and serve

Makes approximately 2 cups


  • 1/4 c. Veganaise
  • 2 Tbsp. vegan sour cream
  • 2 Tbsp. ketchup
  • 1/2 Tbsp. mustard
  • 1/4 tsp. apple-cider vinegar
  • 1/4 tsp. Braggs Liquid Amino Acids
  • 1/4 tsp. onion powder
  • 2 Tbsp. sweet pickle relish
  • Salt and pepper to taste


  1. In a medium bowl, mix all ingredients together until well combined.
  2. Serve over your favorite salad
