Soup Plan Gets Dippy

We had a lot of lemons and a lot of frozen spinach. I thought I would try to make a thick and creamy soup with some. Now, the end result could have been a soup if I thinned it out a bit with vegetable broth or water. Instead, we deemed it to be more of a dip that was pretty good!

Creamy Lemon Spinach Dip

Makes approx. 3 cups

Ingredients:

  • 10oz. box of frozen spinach, thawed
  • 1/2 c. cashew cream
  • 1 c. plain soy milk
  • Juice of one lemon
  • 1 Tbsp. lemon zest
  • 1/2 tsp. onion powder
  • 1/2 tsp. garlic powder
  • 1 tsp. sea salt
  • 1/2 tsp. black pepper

Directions:

  1. Place all ingredients in a blender. Mix on high until well combined.
  2. Serve in a dish with chips, bread and/or fresh veggies
