We had a lot of lemons and a lot of frozen spinach. I thought I would try to make a thick and creamy soup with some. Now, the end result could have been a soup if I thinned it out a bit with vegetable broth or water. Instead, we deemed it to be more of a dip that was pretty good!
Creamy Lemon Spinach Dip

Makes approx. 3 cups
- 10oz. box of frozen spinach, thawed
- 1/2 c. cashew cream
- 1 c. plain soy milk
- Juice of one lemon
- 1 Tbsp. lemon zest
- 1/2 tsp. onion powder
- 1/2 tsp. garlic powder
- 1 tsp. sea salt
- 1/2 tsp. black pepper
- Place all ingredients in a blender. Mix on high until well combined.
- Serve in a dish with chips, bread and/or fresh veggies
